Run to Eat

With upping my mileage, even though it has been a few weeks since I have done a long run:), I am obsessed with eating, so here are more recipes. The first one is a 2009 post from the Pond family, but so worth the re-post!

1/4 t salt

Combine all ingredients into a bowl, mash together until smooth.

4oz mozzarella cheese, cubed
15 big basil leaves

1 small red onion
4 tablespoons olive oil
pepper salt

Wash cherry tomatoes and slice in half across. Put them into a salad bowl and heavily salt them. Wash fresh basil. Roll up each leaf and slice into strips. Dice red onion. Slice mozzarella cheese into bite-sized cubes. Add basil, onion, mozzarella, and capers to salted tomatoes in salad owl. Add vinegar and oil. Add pepper to taste and toss
Add additional lime juice or salt to taste.  For extra spicy guacamole, you can leave in the jalapeno seeds.
